What is Wagyu?
Wagyu means “Japanese cattle.” It is only genuine if it comes from specific breeds —the best known, Kuroge Washu— bred for centuries to develop marbled fat.
From there come Kobe, Matsusaka, Ōmi... and Miyazaki, where ours comes from: one of Japan's most award-winning regions.
Japan grades each animal with a letter (A–C) and a number (1–5). A5 is the highest grade — official, not marketing.
